Makes: 1 Serve
Calories / Serve: 313cal

200g Cauliflower or 160g Broccoli rice – 50 cal
1 cup grated/shredded Carrot – 24 cal
100g Chicken Breast, Steak or 90g Fresh Salmon – 195 cal (filet steak to meet requirements)
6 Almonds – 44 cal
1 tbs Garlic
1 tbs Ginger
Coriander
Chilli flakes or fresh

Instructions:

Season chicken breast with salt/pepper and spray with oil. Place chicken breast in the oven for 30-45 mins till cooked or over 65c OR cook in a pan till cooked through.

Spray a large frying pan with oil and add broccoli or cauliflower rice. Stir for around 2 mins and add garlic, ginger, carrot and stir/flip for 5 mins.

Slice chicken and place on top of rice with fresh coriander, chilli to taste and almonds. Add a squeeze of lime optional.
