Eggs With Potato Hash

Ingredients
2 Eggs – 140 cal
1/2 cup Sweet Potato, diced – 50 cal
1/2 cup White Potato, diced – 60 cal
1/4 Red Onion, chopped – 15 cal
1/4 Red Capsicum, chopped – 10 cal
1 tbsp Olive Oil – 120 cal
Salt and pepper (to taste)
Directions
1. Preheat oven to 200C.
2. In a large bowl, combine the sweet potato, onion, capsicum, olive oil, salt, and pepper. Toss to coat.
3. Spread the sweet potato mixture in a single layer on a baking sheet.
4. Bake for 20-25 minutes, or until the sweet potato is tender.
5. While the sweet potato is baking, cook the egg to your liking.
6. Top the sweet potato hash with the cooked egg and serve.
