Pickled Vegetables

Serves: 4
Calories each serve: 60
INGREDIENTS:
1 Cucumber
1 Carrot
1/2 Red Onion
1/4 Cabbage
1/4 head of Cauliflower
1 Capsicum
3 Cups White Vinegar
3 Cups Water
1 Tbsp Salt
Optional: Dill or Chili Flakes
These are our recommend vegetables but you can add pretty much any one you like!
INSTRUCTIONS:
1. Chop each vegetable into bite size pieces, this will make it much more convenient come the time when you want a quick and easy snack on the go.
2. Mix up vegetable selection in a large bowl or container.
3. Pour vinegar, water and salt over and mix thoroughly, be sure your vinegar sits just over the surface of vegetables.
4. Cover with lid or cling wrap and Leave in the fridge for 24-48hours and enjoy!
