Ingredients

100g Lean Beef Mince – 168 cal
2 cups Zucchini Noodles – 42 cal
1 /2 cup Can Diced Tomatoes – 23 cal
1/4 Brown Onion, diced – 12 cal
1/2 Carrot, diced – 12 cal
1/4 cup Celery, diced – 10 cal
1 tbsp Parmesan cheese, grated – 35 cal
1 tbs Garlic
2 tsp Olive Oil – 80 cal
1/2 tsp Dried Oregano – 5 cal
1 tbs Mixed Herbs
Salt and Pepper (to taste)

Vegetarian Tip: Replace Beef Mince with 200g Can Lentils drained and rinsed.

Directions

1. Heat olive oil in pan over medium heat and add onion, carrot, celery, and garlic. Cook
until softened.
2. Add the oregano, mixed herbs, salt, and pepper and cook for 1 minute more.
3. Add mince and cook until browned.
4. Add diced tomato to pan, bring to a simmer, and cook for 15 minutes, or until the sauce has thickened.
5. While the sauce is cooking, spiralize the zucchini into noodles.
6. Add the zucchini noodles to the sauce and cook for 2 minutes, or until the noodles are
heated through.
7. Stir in the Parmesan cheese and serve immediately.
